Kentucky Fried Chicken
Ingredients :
1 kg chicken, cut into pieces
1 tsp garlic powder
1 tsp pepper powder
¼ tsp dried red chili powder
½ tsp fine salt
Oil for frying
Liquid Coatings Fried Chicken:
300 ml cold water / ice water
300 g flour with high protein / seal chakra twin
40 g cornstarch
½ tbsp milk powder
1 whole egg yolk
½ tsp baking soda
¼ tsp fine salt
½ tsp pepper powder
¼ tsp MSG
Coatings Dry Fried Chicken :
400 g high protein flour
100 g cornstarch
½ tsp baking soda
1 tsp chicken flavor instant bouillon powder
1 tsp garlic powder
¼ tsp MSG (optional)
How to Make Fried Chicken Kentucky Fried Chicken:
Liquid coating: Mix the flour, cornstarch, milk powder, baking powder, pepper, salt and MSG. Mix well. Enter the egg yolk and water little by little while in the mix until well blended. Store in the refrigerator / cold areas.
Dry coating: Mix all dry coating materials. Mix well. Set aside.
Season the chicken pieces with pepper, salt, garlic powder and red chilli powder. Mix well. Let stand 15 minutes for flavor to infuse.
Roll the chicken pieces into dry coating to the entire surface covered with flour. Dip into a liquid coating and roll back into the dry coating. Do it until the chicken runs out.
Heat oil and fry chicken in hot oil with a lot of medium. Cook until chicken is cooked, golden brown and dry. Lift. Drain. Arrange in a serving dish. Serve warm with chili sauce or ketchup bottles.
